Chapter 07 — Availability
The Table Release System
Tables for each month are released on the first, and demand far exceeds 23 seats a night. Here is how the documented system works.

Read first: This guide is an independent resource with no affiliation with the restaurant and cannot arrange visits. All visits are arranged directly with Restaurant Frantzén at restaurantfrantzen.com or by phone at +46 8 20 85 80. Details below are compiled from public sources and may change.
The restaurant states its availability schedule plainly: it is open for lunch and dinner Tuesday through Friday, and tables for the upcoming month are released on the first of each month at 10:00 AM local Stockholm time. With 23 seats per sitting and international demand, peak dates are documented across published accounts to fill within hours of release.
The documented process
- Prepare before release day. The release system runs through the restaurant’s official website. Setting up any required account details in advance avoids losing minutes when it opens.
- Convert the release time correctly. 10:00 in Stockholm is 09:00 in London (summer), 04:00 in New York, 17:00 in Tokyo. An error of one hour is the most common documented cause of missed releases.
- Decide dates and party size in advance. Availability moves quickly; hesitation during selection is costly. Flexibility across several dates measurably improves odds.
- Consider midweek lunch. Across published accounts, Tuesday and Wednesday lunch sittings are consistently the least contested, with a format identical to dinner.
- Ask about cancellations. Direct contact with the restaurant by phone or email is the documented route for cancellation availability between monthly releases.
- Private dining as an alternative. The group operates a Test Kitchen private dining room for parties of 8–14 guests at a documented 5,500 SEK per person, arranged via testkitchen@restaurantfrantzen.com.

Third-party concierge services
A number of concierge services publicly advertise assistance with hard-to-get tables, sometimes for a fee. This guide does not endorse any such service. Anyone considering one should research it independently, confirm its legitimacy, and understand its fee structure before providing payment or personal information. The only channel this guide can point to with confidence is the restaurant’s own website and phone line.
